Will is the Chef Owner of The Small Holding in Kent. As the name suggests they are indeed a farm but what is lovely is that they have a restaurant serving goodies grown on the plot. Will is also a keen forager so quite a few local wild ingredients make their way onto his plates. We chat about the farm and restaurant, what he’s growing, The Hunger Gap, his ‘full acre menu’ (which sounds incredible!), local English wine, foraging in Kent, and their latest restaurant venture The Curlew.

I give you my family recipe for strawberry shortcake - the easiest dessert ever that celebrates the luscious fruit.
I have made a meadowsweet cordial and glazed the pudding with that but you could use elderflower cordial or melted redcurrant jelly.
Foraging with Imogen - 24:40
Our regular forager Imogen Davis talks about meadowsweet. This wild plant, with its honey and almond notes, is abundant in damp ditches and along riverbanks right now.
Meadowsweet can have an unpleasant antiseptic flavour but that is mostly in the stem and leaves. If you use the flowers carefully you will get lovely honey and vanilla-like notes. Use it how you would elderflower really!
It’s also a great medicinal plant and has been used to help with gastro problems, colds, arthritis and rheumatism.
